Homemade Baked Granola
Heyooooo! Last night I threw together some homemade granola and it is so BOMB that I had to share the recipe. I learned how to make this stuff from my roommate in college. Hers is always better than mine (what else is new) but I promise you this stuff is amazing.
Preheat your oven to 375(ish)
In a big mixing bowl, mix together any combination of the following:
About 2 cups of old fashioned oats
About 1 cup slivered almonds
1/2 cup uncooked quinoa
Handful of walnuts, pecans, craisins, coconut flakes (or anything else you want to add)
1/3 cup melted coconut oil
2 tbsp honey, maple syrup, or agave
Optional: Add some peanut butter or almond butter (it'll make everything more sticky)
(Honestly, you really only NEED the oats and some nuts. The quinoa is one of my favorite parts, but experiment and add in anything that you have in your kitchen.)
Mix everything together really well and then pour onto a lined cookie sheet. Press the granola down flat and thin. If the middle is thicker than the edges, the edges will burn while the middle is still undercooked. Bake for about 10 minutes, then take it out and mix it all up again. Bake until the edges are brown (it burns fast so keep an eye on it!)
It won't be crunchy right away. Wait about a half hour before you indulge yourself. Then, pour it over yogurt, have it as cereal, or just grab a handful! If you make some, take a picture and tag @sportingchic, because I would love to see your mad kitchen skills.
